I like to pay attention to all hands also. I'll watch every hand and try not to miss any if possible if playing live. It definitely helps me get acquainted with each players style of play and I also try to figure out what each player could be holding. I think if anything it's really good practice on reading your opponents. As far as online poker goes I really have a hard time watching every hand.

I have not played a lot of online poker but I would imagine it would be a lot harder to do and if you ask me somewhat boring.
